The mad culinary scientist is back with a new book. Heston Blumenthal at home aims to bring some of his molecular magic into your home kitchen.
From the top, the book is a gorgeous, sumptuous read, packed with fantastic photography to accompany Heston’s fantastical ideas.
Recipes vary from Blumenthal’s takes on classics – triple-cooked chips, roast chicken, shepherd’s pie – to crash courses in how he handles the basics – stocks, soups and sauces – to the out-there culinary craziness we’ve come to expect from the chef – liquorice poached salmon and sea bass with vanilla.
Some of the techniques and recipes are perhaps a bit too far out for those below the level of skilled professional but all in all it’s a fabulous book, an educating and exciting read and perhaps one to stick on that Christmas list!
