Freshly shucked oysters

For an easy but elegant appetiser, serve a platter of freshly shucked oysters on a bed of crushed ice

Ingredients (Serves 4)
  • 24 oysters, freshly shucked
  • Crushed ice
  • Tabasco red pepper sauce
Method
Shuck the oysters, making sure that you loosen the flesh from the bottom shells but leave the liquor in.
Arrange the oysters on a platter of crushed ice, with a bottle of Tabasco red pepper sauce on the side for shaking over. Serve immediately.
