1 quantity basic pancake batter
4 eating apples
1 tbsp water
50g/2oz caster sugar
50g/2oz plain or milk chocolate, chopped

Make the pancakes and set aside, keeping warm. Peel, core and slice the apples then place in a medium saucepan with the water and caster sugar.
Cover, bring to the boil and simmer for 5 minutes, stirring occasionally, until the apples are tender and fluffy. Taste and add more sugar if necessary. Set aside to cool slightly. Preheat the grill. Add the chopped chocolate to the warm apples and stir to combine.
Divide the mixture between the pancakes, folding them over to enclose. Carefully transfer to a heatproof dish, dust with icing sugar and place under the grill until the tops of the pancakes are crisp and golden. Serve hot with a dollop of crème fraîche.
