Preparation and cooking time: 4 hours
2 teaspoons ground ginger
100ml (3 ½ fl oz) light coconut milk
300ml (10 fl oz) low-fat Greek yogurt
405g (14 oz) can light condensed milk
1. Thoroughly combine all the ingredients in a large bowl.
2. Pour this mixture into a wide, shallow freezer-proof container. Freeze for about 1 ½ hours or until slushy and starting to freeze.
3. Remove the mixture from the freezer, tip it into a chilled bowl and whisk to remove any ice crystals.
4. Return the mixture to the container and freeze for another 2 hours or until frozen.
5. Serve in scoops.
