Gluten-free fruity crumble

50g PERK!ER porridge
110g flour (we use rice flour)
70g margarine
60g light brown sugar
450g fruit

Get crumbling! Rub the flour and margarine together until it resembles fine bread crumbs. Stir in PERK!ER porridge and light brown sugar and mix thoroughly
Get fruity! Prepare your fruit and place in your baking dish, sprinkle with 2-3 tbsp sugar and 3 tbsp water.
For apples or pears peel, core & slice
For plums or apricots, destone and cut into quarters
For rhubarb slice into 1 inch chunks
Sprinkle your crumble topping on top of the fruit
Get baking! Bake in a preheated oven for 30 mins at 180°C (350°F gas mark 4)
Ready! When the crumble topping is golden brown and the fruit is soft
Steady! If you can wait... leave it to rest for 10 mins.
