Great British Bake Off: What to expect from episode 2

It's Biscuit Week on the second episode of Great British Bake Off on Wednesday, and the remaining 11 contestants will be hoping to impress Paul Hollywood and Mary Berry with their skills across the three key challenges.

Although Sue Perkins will be missing for the first time since the show began back in 2010, it will be business as usual in the tent, starting with a signature challenge that gives bakers just a few hours to make 24 identical decorated biscuits.

For the technical challenge, this year's competitors including Selasi and the first show's star baker Jane will have to master the art of piping to avoid a crumbling whirl, before finishing off with the showstopper challenge – making a big biscuit structure.

From the classic gingerbread house to their own unique designs, the contestants will be hoping their structures don't collapse under the pressure - but who will impress the judges the most and who will be going home?

It was revealed on Wednesday that Sue Perkins will not be appearing in Wednesday's episode. The presenter was unable to take part in filming in April because of a family bereavement, but later recorded some voiceover material as well as a pre-recorded sequence in which she will "discover the etiquette of dunking biscuits, from Victorian high society right back to Greek survival biscuits."

Competitors will be making biscuit structures as part of Biscuit Week

The 2016 series of GBBO started with a bang last as 11.2 million people tuned in to see 12 new contestants step into the Bake Off tent for the first time – around one million more viewers than last year's launch show.

Jane Beedle was named the first star baker of the series, while Lee Banfield was the first to leave after struggling with his bakes, and coming second from bottom in the Jaffa Cake challenge.
