Head chef Rene Redzepi has become synonymous with the ‘new guard’ of global cuisine – leading the field of young, exciting, destination dining.
THE TEAM AT NOMA RECEIVE THEIR AWARDNordic cuisine has become fashionable around the world recently, with a slew of books being published and restaurants opened and Noma sits right at the cutting edge.
The top ten of the competition are densely populated with European offerings (from Heston’s The Fat Duck and Arzak in Spain to Le Chateaubriand in France.
Although there are new entries from as far as Peru (Astrid y Gaston) to Russia (Varvary) and Mexico (Biko) in the top 50. London favourite The Ledbury has swooped in as the highest new entry at 34.
The legendary El Bulli closed this year and is thus off the list, but two Spanish restaurants, El Celler de Can Roca and Mugaritz, sit at numbers two and three respectively, and are lining up behind the champion Noma.
El Celler de Can Roca - which is run by three brothers - has risen two places up the list this year to number two. Also up two places is Mugaritz, which is named the third best restaurant in the world, having recovered following a devastating fire in 2010.
Arguably the night’s most important (or at least most coveted) award is the Chef’s Choice award which this year goes to Massimo Bottura, whose restaurant Osteria Francescana is one of the most renowned in Italy.

Massimo is quickly garnering a reputation for his avant-garde cuisine which although unashamedly modern, reflects traditional Italian techniques.
