Ingredients (Serves 8)
- 175g/6oz Country Life English butter, at room temperature
- 175g/6oz light brown soft sugar
- 4-5 tbsp brandy
Place the butter and sugar in a bowl and whisk together until pale and fluffy. Gradually beat in the brandy, a little at a time.
Place in a bowl, cover with clingfilm and chill until needed. You can make brandy butter up to 3 weeks in advance.
