The New Zealand-born chef, who is currently helping raise awareness of the benefits of buying organic, has shared three delicious autumnal recipes with HELLO! Online.
Low in calories and high in potassium, fennel is an antioxidant that contains lots of vitamins and minerals and is in season in the UK from early summer through to the beginning of winter.
Speaking of buying organic ingredients, Monica recently told The Independent: "Some people think that organic is more expensive, but if you plan wisely, you can make ingredients go further. For example, use the whole chicken – bones for stock, things like that."
Gnocchi is perfect now that the colder weather is here, and fennel – delicate and sweet-flavoured – is the perfect accompaniment.
Figs can be found throughout the year in UK but are in season during the months of September and October. Rich in minerals, they and are a good source of potassium, manganese and iron. They also contain vitamins A, B and C including a decent amount of fibre.
